Pork Rinds: You can also use keto bread or rolls. I prefer plain pork rinds for this recipe, but you can also use flavored pork rinds.
Chicken Broth: You can also use homemade chicken stock or vegetable broth for this recipe.
Vegetables: I used a blend of onions, celery, and mushrooms.
Shredded Mozzarella Cheese: This adds a lot of flavors while keeping the stuffing low-carb.
Baking Powder: Check the expiration date, fresh always works better, than older baking powder.
Seasonings; Garlic Powder, Dried Parsley, Thyme, Sage, Poultry Seasoning, Black Pepper.
Eggs: Helps to bind the stuffing together. Use large and room temperature eggs.
Butter: Helps keep the stuffing moist and delicious!
Sour Cream: I used full fat for added moisture and flavor.
How To Cook Air Fryer Keto Stuffing
If you’re looking for a delicious and healthy stuffing recipe, look no further than this air fryer keto stuffing. With only a few grams of net carbs per serving, it’s perfect for those on the keto diet, and it’s so easy to make that even novice cooks can create a masterpiece.
Begin by turning your pork rinds into fine crumbs if you cannot find them already prepared this way. To do this, place your pork rinds into a zip lock bag and beat the bag with a rolling pin or meat mallet. Be careful to not bust a hole in the bag! Alternatively, you can use a food processor, be careful to not overpack it. Your pork rind crumbs should resemble bread crumbs.
Add the pork rind crumbs, baking powder, garlic, cheese, sour cream, and three eggs to a bowl. Stir well.
Pack the mixture into lightly sprayed loaf pans that will fit your air fryer basket. Bake at 400F for 13 minutes in the air fryer. Loaves will be crispy brown and only slightly soft in the middle. If the center is too soft to the touch, add time in 2-3 minute increments until your loaf is a more solid feeling.
While the loaves are air frying, add butter into a skillet to melt. Then add celery, mushrooms, parsley, and onion to the pan. Cook on medium heat until the ingredients are tender and well combined. Once the loaves are done, take them out of their loaf pans and allow them to cool completely. Once they are cool, cut them into small cubes of ‘bread’.
Add the cubes of bread into a bowl and add the vegetable mixture, the remaining egg, chicken stock, and spices. Stir well.
Add the ingredients back into the loaf pans and air fry at 375F for 13-15 minutes. Cool slightly before serving.
