Ingredients
  

  • 2 medium spaghetti squash
  • 1 tablespoon oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 8 ounces shrimp peeled, deveined and tail removed
  • 3 tablspoons parsley
  • 1/4 cup Parmesan cheese

Instructions
 

  • Cut the spaghetti squash in half lengthwise. Then, remove the seeds and any stringy bits. Next, brush the flesh with olive oil, sprinkle with garlic powder, salt, and black pepper, and place it cut-side down in the air fryer. Cook at 400 degrees for 20 minutes.
  • Once the spaghetti squash is cooked, use a fork to scrape out the flesh. It will come out in strands that resemble spaghetti noodles.
  • When the squash is almost ready, melt the unsalted butter in a large skillet. Add the garlic and shrimp, and season with salt and black pepper, to taste. Stir to combine and cook, stirring frequently, until the shrimp is warmed through and opaque, approximately 2-3 minutes. Do not overcook. Remove from heat and set aside. Keep warm.
  • Evenly divide the contents of the skillet, including the remaining melted butter, between the spaghetti squash halves. Sprinkle with the chopped parsley and gently toss to combine. Top with some freshly grated Parmesan cheese and serve immediately.
