Cupcake Tin or Liners
- 2 cups almond flour
- 1/4 cup coconut flour
- 5 large eggs
- 2 teaspoons baking powder
- 2 tablespoons unsweetened cocoa powder
- 4 tablespoons butter unsalted and room temperature
- 3 tablespoons heavy whipping cream
- 2 teaspoons pure vanilla extract
- 1/2 cup stevia granulated
- 6-8 drops food coloring red
- 1 cup cream cheese frosting
Preheat the air fryer to 300F. Add cupcake liners to a pan that fits inside the air fryer basket or set the cupcake liners into ramekin bowls.
Add eggs, cream, and vanilla to a bowl and whip for 1-2 minutes.
In a separate bowl, add the flours, stevia, baking powder, and cocoa. Combine well and remove any lumps that may form or appear
Add the flour mixture into the egg mixture and beat to combine.
Add the butter and red food coloring. For the red food coloring add drops one at a time until you reach your desired pigment.
Fill cupcake liners about ¾ of the way. Air fry for 10-12 minutes or until a toothpick is inserted and comes out clean.
Cool completely before adding a sugar free cream cheese frosting.
