Ingredients
  

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 5 large eggs
  • 2 teaspoons baking powder
  • 2 tablespoons unsweetened cocoa powder
  • 4 tablespoons butter  unsalted and room temperature
  • 3 tablespoons heavy whipping cream
  • 2 teaspoons pure vanilla extract
  • 1/2 cup stevia granulated
  • 6-8 drops food coloring red
  • 1 cup cream cheese frosting

Instructions
 

  • Preheat the air fryer to 300F. Add cupcake liners to a pan that fits inside the air fryer basket or set the cupcake liners into ramekin bowls.
  • Add eggs, cream, and vanilla to a bowl and whip for 1-2 minutes.
  • In a separate bowl, add the flours, stevia, baking powder, and cocoa. Combine well and remove any lumps that may form or appear
  • Add the flour mixture into the egg mixture and beat to combine.
  • Add the butter and red food coloring. For the red food coloring add drops one at a time until you reach your desired pigment.
  • Fill cupcake liners about ¾ of the way. Air fry for 10-12 minutes or until a toothpick is inserted and comes out clean.
  • Cool completely before adding a sugar free cream cheese frosting.
