Air fryers are all the rage right now and for good reason! They make delicious, healthy food with little to no oil. Today, I am sharing a recipe for keto pumpkin pie muffins that are made in the air fryer. These are perfect for a quick and healthy breakfast or snack!

Ingredients
  

  • 1 cup pumpkin puree
  • 2 large eggs
  • 2 cups almond flour
  • 2 teaspoons baking powder
  • 2 tablespoons coconut flour
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/4 cup butter
  • 8 ounces cream cheese room temperature
  • 2 tablespoons heavy whipping cream
  • 2 tablespoons powdered sweetener
  • 1/2 cup granulated stevia

Instructions
 

  • Preheat the air fryer to 300F. Add cupcake liners to a pan that fits inside the air fryer basket or set the cupcake liners into ramekin bowls.
  • Combine the cream cheese, powdered and granulated stevia, cream, and vanilla extract in a bowl. Combine with an electric hand mixer until smooth.
  • In a separate bowl, add the flours, baking powder, pumpkin pie spice and salt.
  • Add the pumpkin puree, melted butter, and eggs to the flour mixture. Mix well until smooth.
  • Add the pumpkin/flour mixture to the cream cheese mixture and stir in with the electric hand mixer.
  • Spoon into cupcake liners. Air fry  300F for 10-12 minutes.
